I thought it was established that Season 1 Luna was all tuckered out from being Nightmare Moon for so long. She had to rest and rejuvenate before she could get her Celestia-like mane back.

Yep, when Luna was trapped as Nightmare moon on the Moon, Celestia aged just fine from Pink hair, to what she has now.
If anything Nightmare moon's design is what Luna would've looked like had she aged the same as her Sister, instead of being in "suspended animation" while trapped in the moon, and in her Nightmare moon form
